Dolly’s Potatoes
My mother’s friend makes this potato casserole. I’m sure many people may have a variation of this recipe. In our family, it’s more popular than funeral potatoes! This recipe is definitely more Paula Deen than Ellie Krieger.
When we want this potato dish, I’ll sometimes use 2 packages of ready-made mashed potatoes (Country Crock, Bob Evans, etc.) instead. It works well.
Dolly’s Potatoes
- 8 to 10 C leftover mashed potatoes
- 2 tsp jarred minced garlic
- 1/2 Tbsp onion powder
- 1/2 Tbsp garlic powder
- 2 tsp ground black pepper
- 1 Tbsp salt – to taste
- 8 oz cream cheese, softened
- 8 oz sour cream
- Smoked paprika
Preheat oven to 375. Spray 9×13 pan with non-stick cooking spray.
Warm up mashed potatoes in a large mixing bowl in the microwave. Beat in softened cream cheese, sour cream, garlic, onion powder, garlic powder, and black pepper. Taste for seasonings and adjust as necessary.
Spoon into the prepared 9×13 pan and smooth it evenly in the pan. Sprinkle the top with smoked paprika.
Bake for 30 to 35 minutes in the 350 degree oven.
